Grilled Caprese Chicken

I’ve been fortunate enough in my life to have traveled to Italy twice. It’s such a beautiful country, so much culture, amazing architecture, and the food. Oh, that glorious food. I remember being on the plane mid flight and receiving my dinner, complete with caprese salad. Almost every lunch I ate had caprese on the side. I have recreated the classic caprese salad but stuffed it into a chicken breast. I know, I’m a genius…

This dinner is super easy. All you’ll need is chicken breasts, roma tomatoes, fresh motzarella, and fresh basil.

Turn on your grill and preheat to medium. Make a pocket inside your chicken breast, almost butterflied but not. Salt and pepper the inside and outside. Lay down your sliced roma tomatoes, I fit 2 1/2 in each breast. The pop in a few leaves of basil and finish off with sliced tomatoes. Stick a few toothpicks through to secure everything. We don’t want any tomatoes slipping out onto our grill.

Head out to your preheated grill. Start top side down. Grill about 7 minutes on each side or until cooked through or your thermometer reads 165.

Grilled Caprese Chicken

Ingredients

3 boneless skinless chicken breast
3 roma tomatoes, sliced
1 ball fresh mozzarella, sliced
10 large fresh basil leaves
Salt & Pepper

Directions
